Chicken, red pepper, corn & cheese gourmet sausage meal
- 1 Kg Chicken Supreme Fresh Sausage
- 10 Kg Of Lean 80% Chicken Meat Thigh, breast & Skin
- 2.5 Kg Of Ice Or Iced Water
- 100 Gms Corona Cel
Add:
- 50 Gms Diced Corn Kernels
- 50 Gms Capsicum Red Diced Or Slithered Asparagus
- 100 Gms Of Smoked Camembert Cheese With High Resistance To Heat
- Mince the chicken meat through the coarser plate 5ml
- Add half of the gourmet meal and mix thoroughly
- Add half of the iced water and mix till emulsion is tight
- Add the remainder of the seasoned meal mix thoroughly
- Add the remainder of the ice/iced water and again mix thoroughly
- Add the corona cel and mix through till emulsion is tight
- Re mince emulsion (sausage mix) on the fine plate 4ml
- Place corn, red capsicum (or asparagus) and camembert cheese in a bag then shake up well
- Then hand mix the products listed above into the emulsion gently but thoroughly
- Fill in to the appropriate casings and then refrigerate
