Chicken, red pepper, corn & cheese gourmet sausage meal

  • 1 Kg Chicken Supreme Fresh Sausage
  • 10 Kg Of Lean 80% Chicken Meat Thigh, breast & Skin
  • 2.5 Kg Of Ice Or Iced Water
  • 100 Gms Corona Cel


  • 50 Gms Diced Corn Kernels
  • 50 Gms Capsicum Red Diced Or Slithered Asparagus
  • 100 Gms Of Smoked Camembert Cheese With High Resistance To Heat
  1. Mince the chicken meat through the coarser plate 5ml
  2. Add half of the gourmet meal and mix thoroughly
  3. Add half of the iced water and mix till emulsion is tight
  4. Add the remainder of the seasoned meal mix thoroughly
  5. Add the remainder of the ice/iced water and again mix thoroughly
  6. Add the corona cel and mix through till emulsion is tight
  7. Re mince emulsion (sausage mix) on the fine plate 4ml
  8. Place corn, red capsicum (or asparagus) and camembert cheese in a bag then shake up well
  9. Then hand mix the products listed above into the emulsion gently but thoroughly
  10. Fill in to the appropriate casings and then refrigerate
