Slow Roasted Truss tomatoes

  • 8 Truss Tomatoes
  • 2 tbsp quality olive oil
  • 4 tsp 7061 PARMESAN GARLIC PARSLEY CRUMB
  • 2 Kg (or your favourite Corona dry flavour)
  1. Preheat oven to 120°C (conventional) and place the tomatoes on a wire rack on a tray lined with baking paper. Drizzle olive oil and season with the parmesan and garlic parsley crumb.
  2. Roast for 3 hours.
  3. Serve on a platter with extra olive oil and seasoned with cracked pepper if desired.

Tip: Choose the ripest tomatoes as they will be sweeter and full-bodied in flavour. The higher sugar content of the ripened fruit will roast to perfection and impart a delicious sweet caramelised taste.
